Potato and Kale Veggie Soup

Ingredients

Scale
  • 3 tablespoons olive oil
  • 6 medium potatoes, chopped small
  • 2 carrots, chopped
  • 4 garlic cloves, minced
  • 1 onion, chopped
  • 1 bay leaf
  • ½ cup fresh parsley, chopped
  • 1 tsp dried sage (optional)
  • 3 cups of kale, chopped
  • 3 cups vegetable stock
  • salt and pepper to taste

Instructions

  1. In a dutch oven or large soup pot, heat the olive oil over medium heat
  2. Add your potatoes, carrots, garlic, & onion and sauté until softened, about 10-15 minutes
  3. Add the parsley, kale, bay leaf, vegetable stock, salt, pepper, & dried herbs
  4. Bring to a boil
  5. Reduce heat and simmer, covered, for half an hour stirring occassionaly
