
This green kale and eggs breakfast makes me think of the Dr. Seuss book, “Would you eat them on a train? Would you eat them in the rain? I would not eat them here or there, I would not eat them anywhere!”
Haha, I won’t be as pushy as Sam I am, but I do hope you’ll give this green kale & eggs breakfast a try! It is seriously addicting and delicious.
The kale gives a subtle salty crunch while the paprika adds the perfect amount of spice to the creaminess of the softly boiled eggs. If you’re a tired mom like I am in the morning, this breakfast is SO easy you can make it before coffee. It is satiating and fueling; leaving you feeling energized and full.
Health Benefits of Green Kale & Eggs:
Kale: Touted as a superfood for good reason. Kale is rich in vitamins A, C, K, calcium and manganese making it great for the immune system and the gut. Kale also aids in protecting the brain thanks to its bioactive compounds like lutein, beta-carotene and more!
Pasture Raised Eggs: Pasture eggs are more nutrients dense than convention eggs because the chickens are free to roam and eat insects and grass. They are significantly higher in A, E, D, omega 3’s and antioxidants which helps fight inflammation, strengthen the eyes and the immune system.
Paprika: A spice from dried red peppers that is high in antioxidants with anti-inflammatory benefits. Paprika is also high in plant-based vitamin A making it great for eye health and rich in potassium which helps regulate the heart.
To Make:
First, boil the eggs.
While the eggs cook, add some oil to a saute pan and saute the kale with a pinch of salt until softened and golden.
Add cooked kale to a plate with eggs served on top.
Sprinkle with paprika and pepper. Enjoy!
