Ingredients

- 1 handful kale, chopped
- 1 tbsp oil (coconut, avocado, or olive)
- 1/2 avocado, chopped
- 1–2 eggs
- salt/pepper to taste
- sprinkle of paprika & sesame seeds
Instructions
- In a skillet, heat up some oil (I use either olive, coconut, or avocado) over medium heat. Throw in your chopped kale and saute until softened. Push your greens to the sides and add your egg(s) in the middle (you may need to add more oil before adding your eggs). Add a lid to your pan and while the egg is cooking, add your chopped avocado to a bowl. Once finished, add your sauteed kale and eggs to the bowl. Sprinkle with salt/pepper, sesame seeds, and paprika. Enjoy!
