- 2 filets flaky white fish (like wild mahi or cod)
- 2 tbsp avocado oil
- your preferred noodles (I like chickpea, rice, or corn/quinoa noodles)
Sauce (adapted from The Food Network)
- 3 garlic cloves, finely chopped
- 1/2 cup olive oil
- 1 tsp salt
- fresh parsley, chopped or 2 tbsp dry
- 1/2 lemon, juiced + zest
- sprinkle of parmesan (optional)
Instructions
- Bring your favorite heatlhy pasta to a boil; cook, drain and set aside.
- Next, In a medium skillet, bring the avocado oil to medium/high, then add mahi.
- Cook for about 7 minutes, flipping once and slowly chopping the fish while cooking with a metal spatula until small chunks remain and are no longer pink.
- Once cooked, add olive oil and garlic to another medium pan and cook on low/medium until garlic turns a golden brown, about 5-8 minutes.
- Add salt, lemon juice, + 1/4 cup pasta water to garlic mixture.
- Once cooked, add fish and olive oil mixture over noodles.
- Stir and serve topped with lemon zest, parsley and parmesan cheese.
