Healthy Homemade Bars

Ingredients

Scale
  • 1 cup pitted dates, soaked in water for 5 minutes
  • 1 cup mixed nuts*
  • 1/4 cup seeds
  • 1 tbsp raw cacao powder
  • 1 tbsp pure maple syrup
  • 2 heaping tbsp nut butter
  • pinch of himalayan salt

Instructions

  1. Soak dates in a bowl of water for about 5 minutes
  2. While they are soaking, add the rest of ingredients to a food processor and pulse until combined
  3. Add dates and keep pulsing until a more dough like consistency is formed
  4. Transfer to a rectangular pan and push down to set with a spatula
  5. Freeze for a few minutes to harden before cutting bars
  6. Keep in fridge for 1-2 weeks

Notes

*Use whatever mix nuts you like here! We usually use: almonds, brazil nuts, walnuts, cashews, peanuts and pistachios,
For the nut butter, we usually use peanut butter.
The mixed seeds-I like to use pumpkin seeds.
