Ingredients
Scale
1 bunch tuscan kale
1 large lemon, juiced (about 1/4 cup)
1/4 cup extra virgin olive oil
2 cloves garlic, minced
pinch of salt and pepper
sprinkle of shredded parmesan (optional)
croutons and/or baked chicken (optional)
Instructions
- Add kale, lemon juice, olive oil, and garlic to a large salad bowl.
- With your hands, massage the kale to release the juices and mix ingredients.
- Once softened and combined, add salt, pepper, parmesan and croutons, if desired.
- This salad also goes great with baked chicken on top!
