Vegan Einkorn Chocolate Chip Cookies

Serves: About 30 cookies
  • 1 cup coconut sugar
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 cup chocolate chips/chunks*
  • 1½ cup all purpose einkorn flour
  • ½ cup unrefined coconut oil, melted
  • ½ tsp baking soda
  • ¼ cup milk of choice
  1. Preheat oven to 350 degrees farenheit
  2. Grease a baking sheet and set aside
  3. In a large bowl mix dry ingrediets
  4. In a separate bowl mix wet ingredients
  5. Add wet to dry ingredients + chocolate chips and stir to combine (Do not overbeat dough)
  6. Place dough in fridge for 30m-1 hour to harden oil (recommended)
  7. Use a spoon to scoop out cookie dough and place cookies at least 1 in apart in ball form on baking sheet
  8. Bake at 350 for 15-20 minutes or until golden
  9. Check a few minutes before to not overcook
  10. Check with a toothpick in the center to make sure it comes out clean
  11. Enjoy!
*I sometimes like to use half amount of chocolate chips and add walnuts or pecans in place.
Make sure cookies are in tall ball form before baking.
Refrigeration before baking helps harden oils to prevent over-flattening of cookie.
