Scale
Ice Cream:
- 2 cans coconut milk
- ½ cup almond milk
- ¾ cup maple syrup
- 1 tbsp vanilla extract
- ¼ tsp Himalayan salt
Fudge:
- ½ cup chocolate chips (enjoy life brand)
- ½ cup coconut milk (taken from one of the cans)
- ½ cup walnuts, chopped
Equipment:
- ice cream maker
Instructions
- Make sure ice cram maker dish and loaf tin have been chilled in freezer night before.
- First make the fudge
- Heat coconut milk in a small sauce pan
- Once bubbly, pour over nuts and chocolate in a separate bowl
- Stir and let them sit on the counter as you make your ice cream
- Mix the ice cream ingredients in a blender
- Stir in the fridge for 1 hour
- Once chilled, pour in ice cream maker-20 minutes
- Pour churned ice cream into a container (loaf pan) and swirl chocolate mixture throughout
- Place in the freezer to continue hardening for a few hours
