Dairy-Free Fudge Swirl Ice Cream


Ingredients

Scale

Ice Cream:

  • 2 cans coconut milk
  • ½ cup almond milk
  • ¾ cup maple syrup
  • 1 tbsp vanilla extract
  • ¼ tsp Himalayan salt

Fudge:

  • ½ cup chocolate chips (enjoy life brand)
  • ½ cup coconut milk (taken from one of the cans)
  • ½ cup walnuts, chopped

Equipment:

  • ice cream maker

Instructions

  1. Make sure ice cram maker dish and loaf tin have been chilled in freezer night before.
  2. First make the fudge
  3. Heat coconut milk in a small sauce pan
  4. Once bubbly, pour over nuts and chocolate in a separate bowl
  5. Stir and let them sit on the counter as you make your ice cream
  6. Mix the ice cream ingredients in a blender
  7. Stir in the fridge for 1 hour
  8. Once chilled, pour in ice cream maker-20 minutes
  9. Pour churned ice cream into a container (loaf pan) and swirl chocolate mixture throughout
  10. Place in the freezer to continue hardening for a few hours
