- 1 tablespoon olive oil or ghee
- 2 cups white rice
- 4 cups chicken broth or stock
- 1 can tomato sauce
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon salt, plus more to taste
- Pinch of black pepper
- Fresh cilantro, chopped, for serving
Instructions
- Heat the olive oil or ghee in a large skillet over medium heat. Add the rice and cook, stirring occasionally, for about 5 minutes, until lightly golden.
- Add the chicken broth, tomato sauce, garlic, cumin, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 20–30 minutes, or until the rice is tender and all of the liquid has been absorbed.
- Fluff the rice with a fork and top with fresh cilantro before serving.
