Ingredients

1 lb grass-fed ground beef

½ tbsp ghee or olive oil

½ onion, chopped

2 sticks celery, sliced

2 carrots, diced (optional but adds sweetness and color)

4 cloves garlic, finely chopped

2 tbsp tomato paste

1 can diced tomatoes (14.5 oz)

2 cups beef bone broth + 2 cups filtered water
OR 4 cups beef broth -
4–5 small potatoes (about ¾ lb), chopped

½ tsp dried basil
-
½ tsp dried oregano
-
¼ tsp dried thyme
-
1–1½ tsp sea salt, adjust to taste

Freshly cracked black pepper, to taste
Instructions

Turn your Instant Pot to Sauté and add the ghee.

Add the onion, celery, carrots, and garlic (reserve the potatoes for later) along with a pinch of salt and pepper. Sauté for 2–3 minutes, until the vegetables are softened and fragrant.

Add the ground beef and another pinch of salt and pepper. Cook, breaking it apart with a spoon, until fully browned.

Stir in the potatoes, diced tomatoes, tomato paste, broth, and dried herbs until everything is well combined.

Close the lid, set the valve to Sealing, and pressure cook on High for 8 minutes.

Carefully perform a quick pressure release.

Give it a final stir, taste, and adjust seasoning if needed. Serve hot and enjoy the cozy soup — just like Grandma used to make!
