Hamburger Soup (Instant Pot)

Ingredients

  • 1 lb grass-fed ground beef

  • ½ tbsp ghee or olive oil

  • ½ onion, chopped

  • 2 sticks celery, sliced

  • 2 carrots, diced (optional but adds sweetness and color)

  • 4 cloves garlic, finely chopped

  • 2 tbsp tomato paste

  • 1 can diced tomatoes (14.5 oz)

  • 2 cups beef bone broth + 2 cups filtered water
    OR 4 cups beef broth

  • 45 small potatoes (about ¾ lb), chopped

  • ½ tsp dried basil

  • ½ tsp dried oregano

  • ¼ tsp dried thyme

  • 1 tsp sea salt, adjust to taste

  • Freshly cracked black pepper, to taste


Instructions

  • Turn your Instant Pot to Sauté and add the ghee.

  • Add the onion, celery, carrots, and garlic (reserve the potatoes for later) along with a pinch of salt and pepper. Sauté for 2–3 minutes, until the vegetables are softened and fragrant.

  • Add the ground beef and another pinch of salt and pepper. Cook, breaking it apart with a spoon, until fully browned.

  • Stir in the potatoes, diced tomatoes, tomato paste, broth, and dried herbs until everything is well combined.

  • Close the lid, set the valve to Sealing, and pressure cook on High for 8 minutes.

  • Carefully perform a quick pressure release.

  • Give it a final stir, taste, and adjust seasoning if needed. Serve hot and enjoy the cozy soup — just like Grandma used to make!
