Chicken Lettuce Wraps

To Make:
Heat olive oil in a large skillet over medium heat
Add ground chicken and cook until browned, about 4–5 minutes; drain any excess fat
Stir in garlic, onion, tamari, rice vinegar, honey, sriracha (if using), ginger, and spices; cook until fragrant and onions are soft, about 2 minutes
Add diced water chestnuts and green onions; stir and cook for another 2 minutes
Season with salt and pepper to taste
Spoon the chicken mixture into butter lettuce cups and serve with a side of steamed rice if desired

Chicken Lettuce Wraps
Ingredients
1 tbsp extra virgin olive oil
1 pound ground chicken (pasture raised if possible)
3 cloves garlic, minced
1 onion, diced
5 tbsp tamari (or soy sauce)
2 tbsp rice vinegar
1 tsp toasted sesame oil
1 tsp honey
pinch of chinese 5 spice (optional)
1.5 tbsp grated ginger OR sub 1 tsp ginger powder (the powder is more gentle for kids)
1 tbsp sriracha or chili paste (optional)
1 –8 ounce can water chestnuts, drained and diced
2 green onions, sliced
salt and pepper to taste
1 head butter lettuce
steamed white rice, optional
Instructions
Heat oil in a large skillet over medium heat
Add ground chicken and cook until browned, 4-5 minutes, drain excess fat
Stir in garlic, onion and tamari, vinegar, honey, sriracha and spices until translucent, about 2 minutes
Add chestnuts and green onions, stir about 2 minutes
Mix in salt and pepper to taste, serve on top of lettuce and with a side of rice, if you like!
Add extra sriracha if you like it spicy, enjoy!
