Arugula & Sesame Noodles
It’s a salad with noodles.
It’s noodles with a salad?
Does this qualify as a salad?
I think so.
I stumbled across this recipe one day as I was watching The Pioneer Woman, by Ree Drummond. I just love her show. Between her down to earth personality and the fact she owns a cattle ranch and makes delicious recipes, I’m a fan. On this particular show, she was whipping up some sesame noodles and I immediately had to make them. My mouth was watering!
I made a few healthy swatches and made these sesame noodles for lunch. Let me just say…
I love it. My husband loves it, you will love it.
To Make:
- Cook your noodles in a large pot, per package instructions
- In a skillet, cook the ground beef until no longer pink
- Whisk all sauce ingredients (except green onions) together in a bowl.
- In a serving bowl, first lay the arugula down, then add noodles, then beef, then top with a few large spoonfuls of the sauce, top with green onions and hot chili paste, if desired

- 12 ounces of your favorite healthy spaghetti noodles, cooked & drained*
- 1 lb grass fed ground beef
- ¼ cup organic tamari, or soy sauce
- 2 tbsp honey
- 4 cloves garlic, minced
- 2 tbsp rice vinegar
- 3 tbsp pure sesame oil
- sprinkle of hot chilis
- 4 tbsp avocado oil
- 4 whole green onions, sliced
- a large handful of fresh arugula
- optional-hot chili paste to top
