Arugula & Sesame Noodles

It’s a salad with noodles.

It’s noodles with a salad?

Does this qualify as a salad?

I think so.

I stumbled across this recipe one day as I was watching The Pioneer Woman, by Ree Drummond. I just love her show. Between her down to earth personality and the fact she owns a cattle ranch and makes delicious recipes, I’m a fan. On this particular show, she was whipping up some sesame noodles and I immediately had to make them. My mouth was watering!

I made a few healthy swatches and made these sesame noodles for lunch. Let me just say…

I love it. My husband loves it, you will love it.

To Make:

  1. Cook your noodles in a large pot, per package instructions
  2. In a skillet, cook the ground beef until no longer pink
  3. Whisk all sauce ingredients (except green onions) together in a bowl.
  4. In a serving bowl, first lay the arugula down, then add noodles, then beef, then top with a few large spoonfuls of the sauce, top with green onions and hot chili paste, if desired

Ingredients

  • 12 ounces of your favorite healthy spaghetti noodles, cooked & drained*
  • 1 lb grass fed ground beef
  • ¼ cup organic tamari, or soy sauce
  • 2 tbsp honey
  • 4 cloves garlic, minced
  • 2 tbsp rice vinegar
  • 3 tbsp pure sesame oil
  • sprinkle of hot chilis
  • 4 tbsp avocado oil
  • 4 whole green onions, sliced
  • a large handful of fresh arugula
  • optional-hot chili paste to top
