Dairy-Free Fudge Swirl Ice Cream

Since cutting back on my dairy intake, I have been dreaming of some creamy ice cream! There are some great dairy-free ice creams at the grocery store, but they are often expensive and some of them have added ingredients I don’t love. I decided I would go home and experiment and fell in love with this dairy-free fudge swirl ice cream! Just the flavors I was looking for, simple yet indulgent.

The only ingredients are coconut, almond milk, dairy-free chocolate chips, walnuts, salt, & maple syrup.

To Make:

Make sure ice cram maker dish and loaf tin have been chilled in freezer the night before.
First make the fudge
Heat coconut milk in a small sauce pan
Once bubbly, pour over nuts and chocolate in a separate bowl
Stir and let them sit on the counter as you make your ice cream
Mix the ice cream ingredients in a blender
Stir in the fridge for 1 hour
Once chilled, pour in ice cream maker-20 minutes
Pour churned ice cream into a container (loaf pan) and swirl chocolate mixture throughout
Place in the freezer to continue hardening for a few hours

Ingredients

Ice Cream:

  • 2 cans coconut milk
  • ½ cup almond milk
  • ¾ cup maple syrup
  • 1 tbsp vanilla extract
  • ¼ tsp Himalayan salt

Fudge:

  • ½ cup chocolate chips (enjoy life brand)
  • ½ cup coconut milk (taken from one of the cans)
  • ½ cup walnuts, chopped

Equipment:

  • ice cream maker

Instructions
