Chocolate Banana Bites
These were one of my favorite sweet treats as a child! I’d beg my mom to make them, she’d usually freeze the whole banana dipped in chocolate and covered in coconut. However, for an easy to hold treat, I figured the sliced version would work better with my kids. No perfection in the chocolate covering here…as you can see by these rustic looking chocolate banana bites. If you’re looking to make an easy healthy treat, these will not disappoint! Kids love the dipping too. 🙂

Choose a ripe banana, not overly ripe, as a mushy banana would not taste or work as well here. Next, grab some good quality chocolate chips, we love Guittard chocolate due to the quality and taste! Finally, sprinkle on some coconut flakes, or another topping of your choice. The coconut adds an extra element of subtle sweetness and some great healthy quality fats. These do not last long on the counter, are a healthy dessert/snack and are just fun to make!

Health Benefits of Chocolate Banana Bites:
Quality dark chocolate is nutritious! Dark chocolate is high in antioxidants, helping rid the body of free radicals which contribute to disease. Studies indicate that dark chocolate helps prevent colon cancer due to these specific antioxidants. Flavanols, found in some plant based foods, help protect the cells from damage and improve heart and brain health.
Coconut flakes, a healthy fat which improves brain function and can help lower bad cholesterol. Coconut flakes also strengthen the immune system due to their antioxidants. Their fiber profile also helps regulate blood sugar levels.

To Make:
Spread sliced bananas on a sheet pan lined with silicone or parchment paper.
Next, melt chooclate chips in the microwave (for the easy version) for 30 seconds.
Stir with a spoon, then melt again in the microwave for 30 seconds. Mix until smooth.
Use a spoon to spread melted chocolate on top of bananas, no perfection needed!
Sprinkle chocolate bananas with coconut flakes.
Freeze for 1-2 hours. Yum!

1.5 banana, sliced
1/2 cup dark chocolate chips (like Guittard brand) *can also sub milk chocolate chips!
Generous sprinkle of coconut flakes
