Soldiers & Eggs

I grew up eating this simple, British breakfast called soldiers and eggs and it is so much fun serving this now to my kids!

It’s a fun breakfast name. A soft poached egg with sliced toast (the soldiers) covered in butter that get dipped into egg yolk. Yum.

Kids love them! And adults. I’m not going to pretend that I don’t!

Health Benefits of Soldiers & Eggs:

The egg yolk is rich in calcium, magnesium, iron, phosphorus, potassium and zinc. In addition to these minerals egg yolks are also rich in omega 3 fatty acids and B vitamins, including folate. The specific antioxidants in egg yolks also help protect eyes from the age related macular degeneration.

Egg nutrition differs from egg to egg

Depending on the chicken’s environment and what they eat, egg nutrition differs from egg to egg. Studies show that organic, pasture raised hens produce eggs richer in vitamin A, E, Beta Carotene, and omega 3’s. That’s why I find it so important to choose quality eggs, such as pasture-raised where the hens have access to roam freely and eat bugs instead of living in tight quarters. Also look for non-GMO eggs, where the hens are not fed processed, GMO corn and soy products. Since we are exposed to what the chickens eat, I find this to be equally important.

How to cook:

First, toast your bread. While it’s toasting, bring a half pot of water to a boil. Once boiling, very slowly (I like to use a spoon) lower your egg into the water.

Put your timer on! This is very important as not having the right time will end up in a raw or hard boiled egg.

Set the timer for 5 minutes.

When timer goes off, quickly put egg/s under cold water to stop any cooking.

Add your egg to a cute little holder like this (helps for cracking and holding the egg upright) and crack the top with a spoon. Take the shell off only the top half.

Butter your toast and then cut into strips. Your soldiers are now ready for dipping!
