Soldiers & Eggs
I grew up eating this simple British breakfast called soldiers & eggs, and it’s been so fun serving it to my kids now 🥹
A soft-boiled egg with buttery toast strips (“the soldiers”) made for dipping straight into that golden yolk. Simple. Cozy. So good.
Kids love them. Adults love them.
And I’m definitely not pretending I don’t 😌

Why We Love Soldiers & Eggs
Egg yolks are rich in calcium, magnesium, iron, phosphorus, potassium, and zinc. They’re also packed with omega-3 fatty acids and B vitamins (including folate).
Plus, the antioxidants in egg yolks help protect eye health and may reduce age-related macular degeneration.
Egg Quality Matters
Egg nutrition varies depending on how the chickens are raised and what they eat. Studies show pasture-raised, organic hens produce eggs higher in vitamins A & E, beta carotene, and omega-3s.
I always look for pasture-raised, non-GMO eggs—hens that can roam, eat bugs, and aren’t fed processed corn or soy. Since we’re exposed to what they eat, this feels especially important to me.

How to Make Soldiers & Eggs
• Toast your bread
• Bring a half pot of water to a boil
• Gently lower eggs into boiling water (I use a spoon)
• Set a timer for 5 minutes — timing matters!
• When the timer goes off, place eggs under cold water to stop cooking
• Crack the top of the egg, remove the shell from the top half
• Butter toast, slice into strips, and dip away
Simple, nostalgic, and a breakfast that never gets old.
