Mmm I love green kale and eggs.
Because it’s almost like green eggs and ham, right?
Okay, not quite.
But I really do love this simple, healthy green breakfast bowl.
I love the salt and the crunch from the kale. And the paprika on the eggs gives it just a little bit of spice. yum!
It couldn’t be easier.
Boil your eggs and while they’re cooking, saute the kale with some salt in a skillet with olive or avocado oil until softened and slightly golden.
That’s really it, and of course you don’t always have to have this for breakfast. I love it for dinner sometimes too. 🙂

Ingredients
- 1 tbsp olive oil
- 2 large handfuls of chopped kale
- 2 eggs
- pinch of pink himalayan or celtic salt
- pinch of black pepper
- pinch of paprika
Instructions
- Boil 2 eggs in a saucepan
- While your eggs are boiling…
- Heat your olive oil over medium heat in a pan
- Add your kale and salt and sautee for a few minute until lightly softened and the edges turn golden
- Transfer your kale to a small serving bowl and add your finished eggs
- Add paprika and pepper to taste
