Easy Green Breakfast Bowl

I don’t know why I have not posted this recipe sooner. I eat this easy green breakfast bowl often on rushed mornings because it is super easy, healthy, and I actually want to eat it early in the morning. I love all the different colors and flavors going on in this dish between the salty crunch of the kale and the spice from the paprika, I’m convinced you will definitely be wanting this every day like I have!

In a skillet, heat up some oil (I use either olive, coconut, or avocado) over medium heat. Throw in your chopped kale and saute until softened. Push your greens to the sides and add your egg(s) in the middle (you may need to add more oil before adding your eggs). Add a lid to your pan and while the egg is cooking, add your chopped avocado to a bowl. Once finished, add your sauteed kale and eggs to the bowl. Sprinkle with salt/pepper, sesame seeds, and paprika. Enjoy!

Ingredients

Scale
  • 1 handful kale, chopped
  • 1 tbsp oil (coconut, avocado, or olive)
  • 1/2 avocado, chopped
  • 1–2 eggs
  • salt/pepper to taste
  • sprinkle of paprika & sesame seeds

Instructions
