My mouth is watering right now thinking of this dish.
It is delicious, slightly spicy, comforting, and incredibly easy to make.
Oh, and the leftovers taste even better. That is, if you still have any left over!
I thought of making this dish when I had an overgrowth of peppers on our tower garden.
Actually, I planted more than just peppers, but they seemed to be the only thing that grew this summer.
You see my almost naked tower garden, minus the pepper takeover? They loved the Texas heat!
Asher helped me pick the peppers and I thought, ‘How sweet!’
But then he attempted to eat them raw, so I had to quickly grab them from him!
I wasn’t sure at first what to make with all these jalapenos. A couple gallons of salsa? We’d go through that in a day. Just kidding. 🙂
Then I recalled some of my favorite dinners as a kid. Once a week, my mom made a rotisserie chicken, and every time she did, my dad would pull out a large jar of jalapenos. He had to eat jalapenos with his chicken, and this tradition got me enjoying the same spicy treat.
Like I said, this dinner is super easy. Simply throw in all your ingredients into the crockpot.
Heat on low for 6-8 hours, or high for 2-4.
Here it is when done. The juices are amazing.
Serve on top of mashed potatoes, and that’s it!

Ingredients
- 1–2 lb chicken THIGHS
- 1 tbsp chili powder
- ½ tsp salt + more to taste
- ½ tsp pepper
- ½ cup water
- juice from 1 lemon
- 2 cloves garlic, chopped
- 2 strips bacon, chopped
- 1/2–3 jalapenos, chopped (seeds removed)* depending on size and spicy preference
- served with a side of mashed potatoes (optional)
Instructions
- Add all ingredients to a crockpot (minus the mashed potatoes).
- Heat on low for 6-8 hours or high for 2-4 hours.
- Serve on top of mashed potatoes, by itself or a bed of lettuce.
Notes
*If my jalapenos are small, I add 1, if large, I only add a half. That way it’s not too spicy for my kids, and me! :
