Sausage Lentil Soup (Instant Pot)

Comforting lentil soup mixed with Italian sausage make the perfect pair in this super easy and healthy weeknight meal. If lentil soup sounds at all boring to you, I’d like you to try this sausage lentil soup and then tell me what you think. I’ve yet to find someone who hasn’t loved this soup! It also pairs well with dry white wines and sourdough bread, try it for a stay at home date night or your next favorite family meal. Both my husband and kids love this soup!

I grew up eating my mom’s sausage lentil soup, the smell of the spices and sausage in the kitchen made my mouth water. This instant pot sausage lentil soup reminds me of my moms. I think we can all agree that some of our favorite meals are the ones we grew up eating often. Continue reading for some cool health benefits of this simple soup and how to make! There are so many great ingredients to highlight in this dish, but I’m going to focus on the bone broth and lentils below.

Health Benefits:

Lentils: If you were to research the health benefits of lentils, you will continue to see the praises it receives for heart health. In animal studies, lentils have shown to lower cholesterol and prevent heart disease. They are also rich in polyphenols which improve lipid levels, blood pressure, insulin resistance and inflammation.

Bone broth: Gut health! All the talk these days are about gut health, and for good reason, our gut gets a beating in this modern day and age. No worries, bone broth can help repair the gut and lower inflammation. The amino acids not only help seal the gut but also strength your skin and your joints, amazing! Find a homemade recipe here!

To Make:

In your Instant pot, add oil, onion, celery and garlic
Press the saute and cook until softened, 3-5 minutes
Add salt, pepper, herbs and spices and continue stirring
Add lemon juice and water and stir, simmer until reduced by half, about 5 minutes
Add tomatoes, broth, lentils and bay leaf
Stir, cover and set steam valve to sealed position
Pressure cook on high for 10 minutes
Let naturally release for 5 minutes
Open the lid, add sausage and vinegar
Mix, taste and add additional salt if needed

Ingredients

Scale

1 tbsp olive oil or ghee

1 onion, chopped

1 large celery, chopped

4 garlic cloves, minced

1 tsp salt/1 tsp pepper+ more to taste

1/2 tsp dried sage

1/2 tsp dried thyme

1/2 tsp dried rosemary

1 tsp onion powder

1 tsp garlic powder

1 lemon, juiced

3/4 cup filtered water

1 can (14oz) chopped tomatoes

2 cups chicken bone broth + 6 cups water OR 8 cups chicken broth

2 cups dried lentils OR 1.5 cups lentils + 1/2 cup dried mung beans (we love this version!)

1 bay leaf

1 package Aidell’s Italian sausage (or equivalent), sliced

1 tsp red wine vinegar


Instructions
