Easy Healthy Omelette

Do you find it challenging to get an easy, healthy breakfast? One that is satiating and nourishing? I do. The thing about this breakfast is, it’s actually incredibly quick to make, nothing fancy about this omelette. In fact, it’s so easy, you might be making it every day this week after your first try.

Health Benefits of an Easy Healthy Omelette:

Pasture raised eggs are richer in nutrients compared to conventional eggs. They are full of vitamins A, B, D, E and omega 3 fatty acids. Not to mention choline which supports brain health and selenium which benefits the thyroid and immune system. The nutrients in eggs also benefits the eyes, skin and joint health, making it a powerhouse food!

Spinach is loaded with nutrients as well, but these nutrients are actually better absorbed when cooked. The cooked spinach in this easy, healthy omelette is rich in vitamin K which is hugely beneficial for eye, heart, brain and bone health. Spinach protects the body from many diseases while also boosting the immune system and aiding in detoxification.

How to Make this Easy Healthy Omelette:

In a small bowl, whisk eggs

Sprinkle them with a large pinch of salt and pepper, mix once more

Bring a small skillet to high heat, once hot, add butter and spread evently

Immediately bring heat down to low/medium

Add spinach and saute for 2 minutes or until softened

Add eggs, let sit until bottom is cooked and doesn’t spread as easily

Once cooked on bottom, carefully lift the edges and turn over one side to meet with the other side

Continue to cook for about 2-3 minutes

Lay omelette on a plate and sprinkle with more greens and cheese, if desired

Ingredients

Scale

2 pasture raised eggs

handful of spinach, or a similar green

swab of grass fed butter

large pinch of salt and pepper

optional topping: shredded parmesan cheese

In a small bowl, whisk eggs
