Potato & Egg Breakfast Tacos

It’s way too easy to devour a good breakfast taco. There’s something about the mixture of the buttery eggs and crispy potatoes with a good salsa wrapped inside a warm tortilla. That’s how I’d describe these potato & egg breakfast tacos; one bite and you cannot stop. Make a single meal for yourself or have friends over and have a taco party, both sound great.

Breakfast tacos originated in Mexico, yet if you live in Southern Texas like we do, you know that you can find delicious, authentic tacos just about everywhere. San Antonio is known to have some really great Mexican food! While the food scene is great, I still love to make most of our meals homemade, I know exactly the quality and ingredients going into it, and there’s something so sweet about growing up with home cooked meals.

Health Benefits of Potato & Egg Breakfast Tacos:

Pasture Raised Eggs: Pasture raised eggs are a great source of omega 3’s which protects the heart from damage. Many are concerned with egg’s high cholesterol levels, however, eggs are able to balance cholesterol absorption and inflammation which balances the ratio of HDL and LDL cholesterol.

Potatoes: Many nutrients are present in potatoes, including potassium, vitamin C, B6, folate and iron. Their fiber content also help regulate the digestive system. Try eating potatoes with their skin still intact for an extra nutrient boost!

Grass Fed Butter: Once thought an unhealthy food because of its high fat content, butter is actually incredibly nutritious! Grass fed butter is anti-inflammatory, high in vitamin A and actually anti-cancer because of its high CLA content. More butter for me, please!

To Make:

In a small to medium skillet, add a swab of grass fed butter over medium/high heat.

Add diced potatoes and saute until they are golden brown and beginning to crisp on the edtegs, about 5 minutes.

Set potatoes aside on a plate.

In the same skillet, add more butter and mixed eggs.

Scramble until they are done, making sure not to overcook the eggs.

Warm your tortillas then add potatoes and eggs inside them. Add your favorite salsa and cilantro, if desired.

Scale

1 small potato, previously baked or boiled

2 pasture raised eggs

swab or grass fed butter

large sprinkle salt and pepper

GMO free corn tortillas, or your favorite healthy tortillas

optional toppings:

salsa, cilantro & sliced avocado
