A healthy, easy, anti-inflammatory shredded chicken
Ingredients
- 1–2 lbs pasture-raised chicken thighs (or chicken breasts)
- 4 tablespoons extra virgin olive oil
- 1–1½ teaspoons sea salt
- ½–1 teaspoon black pepper
- 1–2 teaspoons all-purpose seasoning
- 1–2 teaspoons ground turmeric
Instructions
- Preheat oven to 350°F.
- Place 1–2 lbs chicken thighs (or breasts) in a casserole dish.
- Drizzle with extra virgin olive oil, then season generously with salt, pepper, all-purpose seasoning (we love Bragg’s or Mountain Rose Herbs), and turmeric.
- Bake for 20–30 minutes, or until the chicken is cooked through but still moist. Be careful not to overcook.
- Check occasionally as it bakes to ensure it stays juicy.
- Remove from oven and shred with two fork, or shred with a KitchenAid Mixer.
