Lamb chops originated in Great Britain, but they have become a classic American dish over the years. These lamb chops are simple, take roughly 10 minutes of cooking time, and come out juicy and delicious every time!
You can buy lamb chops from most grocery stores but we love the ones from Costco. They are a great price and sourced from Australia where they are pasture raised. Pasture raised lamb ensures a better quality meat with a higher profile of nutrients!

Many herbs taste amazing on lamb but rosemary is usually a top favorite of most. Some say it brings out a woody flavor. Thyme, mint and parsley are some other herbs that are often chosen to be cooked with lamb.

Starchy roots and vegetables go well with lamb. We often make buttered potatoes and a side salad when we make lamb chops!
Health Benefits of Lamb
Lamb is a great nervous system regulator thanks to its rich supply of B12, plus other B vitamins. If you are like me and you have many hiccups in your methylation chain, then lamb is a great food for you which helps balance those B vitamin stores in the body! Lamb is also rich in zinc which helps keep your immune system strong and better able to handle infections that might come your way. Omega 3’s are also to note in lamb, as they are a higher dosage in this meat than in beef. Omega 3’s help with inflammation within the body and helps against many cancers.
To Make:
Pull out lamb from the fridge and let it sit on the counter for 15-30 minutes to bring to room temp
Sprinkle salt and pepper onto the lamb
Add ghee (or other oil) to high heat in a large skillet
Once hot, add lamb and cook for 4 minutes
Flip lamb, add herbs, and cook for another 4 minutes
The lamb is cooked through when you press your spatula on the lamb and clear/brown juices are released. If pink or red blood is released, cook for another 2 minutes. The smaller lamb chops cook faster than the larger ones.
Once cooked, bring the heat to a low simmer and add lamb chops to a plate to rest.
Add butter and garlic to the pan and cook until fragrant.
Pour butter over lamb chops and serve!

2 tbsp grass fed butter
4 cloves garlic, chopped
few large pinches of salt and pepper
5 sprigs fresh rosemary or 1 tbsp dried rosemary
1 tsp dried sage
1/2 tsp dried thyme
