Crockpot Flank Steak with Beans

This crockpot flank steak with beans is hands-down one of our favorite easy dinners — hearty, full of flavor, and perfect for busy weeknights. My good friend Mariah shared this recipe with us years ago, and it has become a staple in our family’s rotation.

Mariah and I first met backstage at a runway show, bonding instantly over our shared love of health, cooking, and good food (and apparently great husbands, too!). After our first double date picnic, she invited us over for dinner and served this dish — and we were hooked ever since.

The combination of tender slow-cooked flank steak, savory salsa, and satisfying black beans makes this crockpot dinner comforting and simple. Serve it over rice or enjoy it as is — either way, it’s sure to become a favorite at your table.

Why We Love This Crockpot Flank Steak with Beans

Ingredients

Optional: cooked rice for serving

1–2 lbs skirt, flank, or flat iron steak

16 oz salsa

2 cans black beans (or about 3 cups cooked beans)

1 bell pepper, chopped

1 onion, chopped

4 cloves garlic, minced

1 tsp oregano

1 tsp cumin

¼ tsp paprika

2 tsp chili powder

Salt and pepper, to taste

How to Make

  1. Place steak, salsa, black beans, bell pepper, onion, garlic, and spices in the crockpot.
  2. Cook on low for 6–8 hours or high for 2–4 hours, until the steak is tender.
  3. Slice the steak thinly and stir back into the beans and sauce.
  4. Serve warm, over rice if desired, and enjoy your crockpot flank steak with beans!

Ingredients

  • 12 lbs skirt, flank, or flat iron steak

  • 16 oz salsa

  • 2 cans black beans (or about 3 cups cooked beans)

  • 1 bell pepper, chopped

  • 1 onion, chopped

  • 4 cloves garlic, minced

  • 1 tsp oregano

  • 1 tsp cumin

  • ¼ tsp paprika

  • 2 tsp chili powder

  • Salt and pepper, to taste

  • Optional: cooked rice, for serving


Instructions

  • Place all ingredients except the rice into your crockpot.

  • Cook on low for 6–8 hours or high for 2–4 hours, until the steak is tender and flavorful.

  • Once done, slice the steak thinly and stir it back into the sauce and beans.

  • Serve over a bed of warm cooked rice — and enjoy!
