Have you ever tried okra baked with curry before? I hadn’t.
Until one evening Jordan and I went on a date to a tapas restaurant. Six small dishes later and a couple glasses of wine and I had fallen very deeply in love with one of the dishes. It’s name was curried okra and he…I mean it, was amazing.
The popular Indian spice, curry, is so warming and inviting and will most likely have you eating more than you anticipated.
This side dish is simple to make. Chop two large handfuls of fresh okra. Then mix in a bowl with avocado oil, salt/pepper, and curry spice.
Add to a baking dish and cook on 350 degrees for about 15-20 minutes or until a slight golden color on the edges.

Ingredients
- 2 large handfuls fresh okra, chopped
- 1 tbsp avocado oil
- salt/pepper to taste
- 4 tbsp curry powder
Instructions
- Add all ingredients to a large bowl and mix
- Spread on a baking sheet and bake at 350 for 15-20 minutes or until golden and fragrant
