Baked Chicken Kabobs

If you love traditional grilled kabobs then you will love these baked chicken kabobs!

The stove top sear gives these chicken kabobs that grill taste while baking them makes it super easy to make any day of the week.

My family devours these baked chicken kabobs. And of course you can choose steak or shrimp if you want to change up the protein. Part of the fun of kabobs is how you can make them your own!

Health Benefits:

Pasture raised chicken: If possible, look for pasture raised chicken which naturally contains more vitamins and minerals. For example, pasture raised contains 50% more vitamin A and has less fat, overall. You can taste the difference in the fat as conventional chicken seems to taste fattier and more bland.

Zucchini: This fruit is rich in vitamin A and antioxidants, making it a healthy eye and anti-aging food. Zucchini also contains soluble fiber which feeds the good bacteria in your gut, contributing to healthy digestion.

To make:

Before anything else, soak your bamboo skewers in a pan of water for 30 minutes to prevent burning.
Preheat oven to 350 degrees
Mix your marinade ingredients
Place chicken in a dish and pour marinade over, let sit for 30 min, flip your chicken half way through
Once done soaking, place veggies and chicken on kabobs in whichever order you prefer
Add oil to a hot skillet, sear skewers on both sides until meat is browned
Add skewers to a sheet pan or leave on the skillet and bake in oven for about 10 minutes or until chicken is cooked through.
Serve with your favorite sides!

Ingredients

Scale

8 skewers, soaked in water for 30min to prevent burning
1 to 1.5 lbs chicken, chopped into large chunks
1-2 zucchini, roughly sliced and chopped into chunks
1 onion, chopped into chunks
1 bell pepper, chopped into chunks

marinade
1/2 lemon
salt/pepper
1 tsp italian seasoning
2 tbsp extra virgin olive oil
4 garlic, minced

Side of rice, salad, or your favorite dipping sauce.
