Hamburger Soup (Instant Pot)

Going to my Grandma Ida’s house as a kid often meant hamburger soup on the stove. It was so comforting and satiating. A simple meal that never disappoints.

It wasn’t until I had my own family that I began thinking of my Grandma’s hamburger soup again. My husband, Jordan, is a big soup fan and my kids love hamburger meat so this soup is a win in our home! I began cooking this soup over the stove but over the years I’ve moved to making it in the instant pot; it’s just that much easier. A quick 10 minutes of prep and 10 minutes to cook and it is ready!

Making soups for your family is a great way to add some gut nourishing ingredients like bone broths and lots of veggies without the kids complaining too much, ha. I hope you’ll try this comforting hamburger soup and let me know if you enjoyed it in the comments below!

Health Benefits:

Bone broth: The healing properties in this broth help keep sickness away. Rich in minerals, collagen and amino acids that heal the body, specifically the gut lining. As Hippocrates once said, “All diseases start in the gut.” Because of the collagen present in bone broth it also supports your joints and skin elasticity. Think of it as a lubricant and beauty food! The added electrolytes in the broth also keep your cells hydrated and happy. As you can see, this broth is rich in health benefits!

To Make:

Add ghee, veggies and a couple pinches of salt and pepper to the instant pot and sauté for 2 minutes until gently softened.
Add beef and another pinch of salt and pepper and continue to sauté and break apart until browned.
Add potatoes, tomatoes and tomato paste, broth and seasoning and stir until combined.
Close lid, make sure valve is on sealing and pressure cook for 8 minutes
Quick pressure release and add any additional add ins if desired! (see recipe)

Ingredients

Scale

1 lb grass fed ground beef

1/2 tbsp ghee or olive oil

1/2 onion, chopped

2 sticks celery, sliced

4 cloves garlic, chopped small

2 tbsp tomato paste

1 can diced tomatoes

2 cups beef bone broth + 2 cups filtered water OR 4 cups beef broth

4–5 small potatoes (3/4 pound), chopped

1/2 tsp ground basil

1/2 tsp ground oregano

1/4 tsp ground thyme

salt/pepper to taste
