My kids want pancakes EVERY SINGLE MORNING. Without fail, I will hear, “Mama, I hungry…I want a pancake.” And this goes on repeat until I make them. Making nutritious pancakes every morning is exhausting, so I started making a dry pancake & waffle mix that’s easy to whip up and lasts me about a month. Happy mama and kids!
There are many great dry mixes at the grocery store, but you will love making this dry pancake mix! It’s nice knowing exactly what’s going in, saving money, and you have options here. Choose healthier grains, ancient grains like einkorn (this is what I used above) or no grains at all, like almond flour for a gluten free option.

Raw Milk:
For example, I use raw milk here but you can also choose your favorite nut milk. If you tolerate it well, raw milk is rich in nutrients and benefits. According to NCBI, there is increasing scientific evidence that raw milk reduces allergies and atopic eczema. Consumption of raw milk in the early years of life also has been shown to reduce the risk of respiratory infections and fever by 30%.
To Make:
Add ingredients listen below to a large bowl (or large ziploc bag) and mix well. Store in the fridge or freezer until ready to use mix.
To make pancakes:
1 cup dry pancake mix
1 egg
2 tbsp butter, melted
1 cup milk
1/3 cup pumpkin puree, optional
Mix all ingredients in a large bowl. Scoop batter onto a buttered hot skillet and flip when bubbly. Serve with your favorite pancake toppings!
To make waffles:
Use same ingredients but instead of 1 tbsp of butter, use 4 tbsp.
