This is a frequently made dish at our home because it is so easy to make and tastes like something you’d find at an old, rustic Italian restaurant.
Jordan and I really love Italian food. When traveling around Italy, we ate way more pizza and pasta than one should and was in awe of all their flavors! The Italians have a way of blending these flavors together so perfectly! As a result, I now compare all Italian food to my time there, it’s a problem!
Also, my mom often made this chicken cacciatore when I was young. It’s actually a big reason why I love making it today. She often made it when friends and family came over. Anytime I smelt the array of garlic and onions in a wine, tomato sauce, I knew we were having company!
It’s easy to see why she did, this dish is a crowd pleaser!
Firstly, chop your veggies and place in a large bowl. Meanwhile, in a casserole dish, add a swig of olive oil and place your chicken sprinkled with salt and pepper. After that, place your chopped veggies all over the chicken and give them another swig of olive oil, salt and pepper. Finally, bake in the oven at 350 degrees for one hour.
Once the vegetables have softened. Take your dish out and spread your tomato and wine sauce over the top.
Bake for another 10 minutes. Can you smell the amazing aroma?!
Finally, enjoy with a glass of red wine and some rustic sourdough bread!

Ingredients
- 1 lb chicken breast or thighs (your preference)
- 1 tsp salt
- ½ tsp pepper
- 1 green bell pepper, chopped
- 4–5 small potatoes, chopped
- ¼ lb mushrooms, sliced
- 1 onion, chopped
- 4 garlic cloves, chopped
- 1 bay leaf
- handful of greens (kale, spinach, etc) chopped (optional)
- ¼ cup olive oil
- 1 can tomato sauce (preferably bpa-free)
- 1/3 cup red wine
- 1+ tbsp parsley (fresh or dried)
Instructions
- Preheat oven to 375
- Cover baking dish with olive oil (1/8 cup)
- Place chicken in dish
- Add salt, pepper, bell pepper, onion, mushrooms, potatoes, garlic, & bay leaf
- Sprinkle with more olive oil (1/8 cup)
- Bake at 350 degrees for 1 hour
- Mix tomatoes and wine in a bowl
- Pour tomatoes and wine over chicken dish
- Bake for another 10 minutes
- Sprinkle with parsley or your favorite Italian herbs
- Serves well with rustic bread or an extra side of roasted potatoes
