I have a toddler who would live on bars if he could.

When he is hungry he informs me by saying, “Mama, I want a bar.”

It’s not necessarily the worst toddler food to be hooked on, I tend to buy large boxes of Lara bars when we are traveling, simple ingredients and he loves them! However, I wanted to pack his bars with even more nutrients. These ingredients are simple and we always have on hand!

Asher loves not only making these with me, but eating them as well. I adjusted ingredients based off his preferences, so these bars are toddler taste test approved!

What’s inside?

Dates, nuts & seeds

Raw cacao and a pinch of pink salt

You might have it all on hand right now!

To make:

Soak dates in a bowl of water for about 5 minutes
While they are soaking, add the rest of ingredients to a food processor and pulse until combined
Add dates and keep pulsing until a more dough like consistency is formed
Transfer to a rectangular pan and push down to set with a spatula
Freeze for a few minutes to harden before cutting bars
Keep in fridge for 1-2 weeks

Ingredients

Scale
  • 1 cup pitted dates, soaked in water for 5 minutes
  • 1 cup mixed nuts*
  • 1/4 cup seeds
  • 1 tbsp raw cacao powder
  • 1 tbsp pure maple syrup
  • 2 heaping tbsp nut butter
  • pinch of himalayan salt

Instructions

  1. Soak dates in a bowl of water for about 5 minutes

  4. Transfer to a rectangular pan and push down to set with a spatula

  6. Keep in fridge for 1-2 weeks

Notes

*Use whatever mix nuts you like here! We usually use: almonds, brazil nuts, walnuts, cashews, peanuts and pistachios,
For the nut butter, we usually use peanut butter.
The mixed seeds-I like to use pumpkin seeds.
