Anyone else not a big sweet potato fan but LOVE the fries? That’s us. Sweet potatoes are so healthy! You’d think I was a fanatic…but actually, I find them to be odd. Sweet and savory? I’m still working on it. I want to like them, I really do, but I think it’s just going to take a little bit more time. They’re an acquired taste, right?
Thankfully, both hubby and I love these sweet potato fries! They are crispy, not too sweet, and with the sprinkled paprika they add just a bit of spice. This is our go-to side dish many rushed nights…which actually feels like most nights these days.

Ingredients

- 3 medium sized sweet potatoes, thinly sliced
- 2 tbsp avocado oil
- 1/2 tsp paprika
- 1/2 tsp pepper
- 1/4 + tsp himalayan salt
Instructions
- In a large mixing bowl, mix together all your ingredients until the spices and oil completely cover the fries.
- Lay your fries on a baking sheet covered with parchment paper
- Bake at 350 degrees for 30-45 minutes depending on desired level of crispiness
