An EASY, healthy and delicious dinner that I’m sure your family will love is Mariah’s Crockpot Flank Steak with beans.
This dish is named after my good friend Mariah because, well, she created this crockpot recipe. Years ago, Mariah and I met backstage at a runway show. Our common interests made us instantly hit it off, both in the fashion industry, yet both excited by health and cooking good foods. We thought our husbands might get along well too, so we set up a picnic day for us all to casually hang out. After our “first friendship date” went well, Mariah invited us over for dinner, she made her crockpot flank steak and it worked, we were hooked. We’ve been friends ever since!
The spices and salsa bring a bit of spice and the black beans and rice create a hearty, comforting dish. Our whole family loves Mariah’s crockpot flank steak with beans!
Ingredients:
1-2 lbs skirt, flank or flat iron steak
16 oz salsa
2 cans black beans, or 3 cups previously cooked beans
1 bell pepper, chopped
1 onion, chopped
4 cloves garlic, chopped
1 tsp oregano
1 tsp cumin
1/4 tsp paprika
2 tsp chili powder
salt and pepper to taste
optional: side of rice
To make:
Place all ingredients, minus the rice in crockpot.
Cook on low for 6-8 hours or high for 2-4 hours
Once cooked, slice steak thin and add back to the crockpot
Stir until all the ingredients are combined.
Add on top of a bed of cooked rice.
