All the flavors come together so well in this Mahi & Lemon garlic pasta. The richness from the noodles and the tang from the lemon is quite addicting. The Mahi is soft and flaky and melts in your mouth. This may be the easiest dish to make on the whole blog, no exaggeration. Not only it is easy but this mahi & lemon garlic pasta makes for a great family weeknight meal. The noodles and fish are simple enough that kids love it, read on for the health benefits!
Health Benefits:
Wild caught Mahi is rich in omega 3 fatty acids which lowers inflammation within the body and helps balance omega 6, which is more prevalent in highly processed foods. Mahi is a great healthy heart food because of it’s array of B vitamins, selenium and potassium which specifically target the hearts function. Look for wild caught, if possible, which is naturally higher in vitamins and minerals than farmed fish.
To make:
Bring your favorite healthy pasta to a boil; cook, drain (set aside 1/4 pasta water for sauce) and set aside. We like to use either Einkorn noodles from Jovial Foods, an ancient grain gluten free, or organic whole wheat from Europe, Costco sells some great options!
Next, In a medium skillet, bring oil to medium/high, then add fish.
Cook for about 7 minutes, flipping once and slowly chopping the fish while cooking with a metal spatula until small chunks remain and are no longer pink.
Once fish is cooked, set aside. Add olive oil and garlic to another medium pan and cook on low/medium until garlic turns a golden brown, roughly 5 minutes.
Add salt, lemon juice, + 1/4 cup pasta water to garlic mixture. Forget to set aside 1/4 cup pasta water? Don’t panic, just use regular water here.
Once cooked, serve on a plate of noodles, topped with the fish and the oil garlic mixture.
Top with lemon zest, fresh parsley and parmesan cheese.
Enjoy!

Thank you Heather! I made this tonight and it was excellent! I had some fresh caught Mahi, broke out my Pasta Queen and made fresh fettuccine, and followed your recipe to the tee, with one exception: I used fresh cilantro rather than parsley, because that’s what I had on hand. Result was very tasty indeed and fun to make. Thanks for sharing! Joe
